My mom has collected many great recipes over the years, and among those recipes, there is an envelope labeled “Our ALL TIME favorite recipes”, and this chicken salad recipe can be found in there. While I am not sure the origin exactly, I do know it was passed down in the family, and we have really enjoyed eating this at picnic’s over the years.
This chicken salad is especially good because of the crunchy texture of the water chestnuts, slivered almonds, and celery. The addition of the cream of chicken soup and mayonnaise gives is such a nice flavor. It is delightful when served chilled on onion rolls, and with a side of green grapes or tart apples.
Joy’s Chicken Salad
Ingredients
3 Cups cooked cubed chicken breast
1 1/2 Cups chopped celery
3/4 Cups slivered almonds
1 can 6-8 oz water chestnuts diced
1/2 teaspoon salt
1 small, 1″ diameter onion chopped fine
1Tablespoon lemon juice
1 1/2 Cups mayonnaise
1 can cream of chicken soup
3/4 Cups finely grated sharp cheddar cheese
Instructions
Combine all and serve chilled
