Breakfast is my favorite meal of the day. Most of my adult life I have had jobs that require getting to work so early, that I haven’t had the opportunity to sit down and enjoy breakfast. Therefore on days when I actually get to sit down and enjoy breakfast it is a highly cherished time. My husband, who knows I savor breakfast, and is the true kitchen connoisseur, has come up with a fun assortment of unique and delicious breakfasts to add into our usual routine. The 4th option is my addition, from when I was going the Whole 30 eating plan. Finally, the 5th idea is not food, but it’s a variation on breakfast’s favorite beverage pairing, coffee. If you are looking for a twist to your usual breakfast routine, these suggestions are a great place to start.
1.) Eggs Benedict This breakfast originates from the 1860’s from New York City. An open-faced English muffin sandwich, with Canadian bacon, a poached egg, and hollandaise sauce on top. Recipe
2.) Banana Oatmeal Pancakes We just love these banana oatmeal pancakes. They are more wholesome and taste better than traditional pancakes. Though healthier, we still indulge ourselves with maple syrup on top, I mean how can you not? Recipe
3.) Bagels & Lox – This idea actually came to Joe through his brother in San Francisco who sent a photo of eating these. We actually very much enjoy this savory breakfast, but we were laughing because we realize some people might think it sounds disgusting. A hilarious scene from Curb Your Enthusiasm comes to mind, where Larry David gets a sandwich named after him at a local diner, but he doesn’t like the sound of it and tries to switch sandwiches with Ted Danson. All you need are some toasted NY style fresh bagels, cream cheese, capers, red onions, and chopped up smoked salmon.
4.) Loaded Breakfast Sweet Potato – Heat a sweet potato by poking holes in it with a fork, and put in the microwave for about 6 minutes, depending on the size (more on baking a potato in microwave: read more here ). Cut it open and put almond butter, blueberries, coconut flakes, chopped nuts of your choice, and cinnamon. I had never thought about a sweet potato as a breakfast food, but when made fancy like this, it is truly a healthy and lovely way to start the day.
5.) Dalgona Coffee At the time of writing this, we are experiencing the Covid-19 stay at home order, and this Dalgona coffee recipe has gone viral, as all of us who are staying at home are longing for coffee shops, and rather bored.
